Lori, I think your question is a little too vague. There is no best cookbook. There are thousands of recipes available online, and I have built my own "cookbook" a little at a time over the years. We would need a lot more information to make suggestions. Like are you cooking for only yourself, or a family? Since you said you are trying to leave out avocados I assume you are trying to lose weight. If that is true, then that would change what people would recommend. More important than all that, I believe, is to keep meals simple. I eat the same things most days. Oatmeal and fruit for breakfast, a big salad with a starch added for lunch. I do make involved recipes sometimes, but not a daily thing. Here's a pretty simple thing I do with kale. I buy a bunch of kale and a bunch of chard (the usual size you find in supermarket) and remove stems. I steam them together for about 8 minutes. While they are steaming I mix in a large bowl 1 Tbl balsamic vinegar (i used pear infused but any flavor you like will work) 1 tsp dill, 1 tsp.basil. 1-2 minced garlic cloves. After steaming add greens to bowl mix and eat! My wife and I both love this as a side dish. After all that I do have a cookbook recommendation: Straight Up Food by Cathy Fisher. The recipes are good and there is a lot of info on preparation, where to get ingredients, and why to eat this diet.

Just as a small added note, the difference in what doctors recommend can be due to what comprises the make up of their program. Dr. Fuhrman stresses more greens and vegetables as the food you should eat the most, and makes up calories by adding more nuts and seeds, which he feels are healthier than starch heavy foods like potatoes and rice.  The more starch based doctors want more calories from starchier foods, so there is less room calorically for higher fat foods.

Flora if you are doing an elimination diet the foods on the list are the only foods you eat, and then you see how you do on them.  Then over time you add in another food and see how that affects you.  In that way you can hopefully see what foods are causing you problems.

I run a whole plant-based cooking club that teaches people how to "love food that loves them back"--how to eat more vegetables, fruit, whole grains and beans, with no added refined oils or animal products. It has been an incredible journey, sharing what I have been learning and how it is changing my own health for the better. We also have a Facebook Page (Flint New Start Cooking Club) and a website--newstarthealthbites.com

But I want to be able to reach more people and be a more effective health educator. So today, I have begun the plant nutrition course offered by T. Colin Campbell and his team. It has been an awesome day studying the first module of this course and I look forward to how this is going to expand my opportunities to help more people discover the benefits of a whole plant based lifestyle.

Hi all, jusst joined the forum. and thought I would write a note to introduce myself.  My name is Al Viviani and I live just outside Las Vegas NV.  My wife and I started eating a healthy diet in 1990 after I read the book Fit for Life.  We joined the Natural Hygiene Society and did very well following that food plan.  We went to confrences which included meeting Dr Alan Goldhamer, Dr.Doug Graham, and Dr Joel Fuhrman among others who were the main proponents of the NHS at the time.  It was a mostly raw diet.  We did well on that diet staying trim and healthy for a few years.  Then the NHS broke up and the Drs. went their separate ways each creating their own versions of a healthy lifestyle.  Dr Graham has stayed the closest to Natural Hygiene.

By 1997 we had lost our way as far as eating well.  This was partially brought on by moving to Las Vegas where we had unlimited access to free food and buffets.  We never ate at home since all our food in the casinos was free. my weight at that itme topped out at 315 pounds (I am 6' tall).  Just as a note I have been overweight my entire life, although by todays standards, as a child, I would have been pretty normal.

About 9 months after our move to Vegas I looked in the mirror and thought to myself I know better than this, and that morning announced to my wife that I was going to start a McDougall diet.  I had read some of his books, and liked the sound of a starch based diet.  We attended many advance study weekends in Santa Rosa and also did the McDougall 10 day.  We also did 2 stays with Dr Goldhamer at True North. I am now the healthiest I've ever been, cycle almost every day ablut 15 miles and weigh 175 pounds.  Dr Carney's diet reccomendations are wonderful, and they will get you healthy!  Since I've studied and lived this lifestyle for many years I am happy to help anyone with problems following this lifestyle, as I have faced most of them over the years.
