Effect of fat and carbohydrate consumption on endothelial function.

High consumption of diets rich in monounsaturated fats may impair endothelial function in healthy individuals.

This study examined the effect of high intake of monounsaturated-rich fat and high-carbohydrate diets on endothelial function. The participants in this study were divided into two groups: the high-fat group and the high-carbohydrate cohort. The endothelial function of all the subjects was assessed before and after dietary intervention.

Researchers discovered acute impairment in endothelial function in subjects fed with diets rich in monounsaturated fat. On the other hand, no sign of endothelial dysfunction was found in the high-carbohydrate group at the end of dietary intervention. The results of this study show that high consumption of meals high in monounsaturated fats may have negative effect on endothelial function and cardiovascular health.
